Calculating open backlog at a point in time

I'm trying to work out how many tickets were opened on our Service Desk at a point in time. We have open and closed dates, so I'm trying to use Google Sheets or Excel to create a blank calendar and reflect how many tickets remained open over time.

This would ultimately allow us to create a line graph that showed our backlog decreasing over time, as we are closing more tickets than opening. Just struggling with what the formula would look like.
